Traditionally created by picking high-grade leaves, withering and steaming and then rolling them into small pellet shapes to prepare for drying.
Produced by unfermented leaves of the camellia sinensis plant, green tea does not go through the oxidation process as does Oolong and back tea.
Instead, heat is applied to the leaves to neutralise the oxidative enzymes before oxidation is able to take effect. The resulting liquor of the infused green tea is typically light and pale in colour, often with a green hue.
How to prepare
Obtain quality water and fill your kettle, setting it to 85°. Weigh 1.4g of tea, ensuring you add the leaves first, before following with water.
Upon pouring, set your timer to ensure you steep 2 ½ mins. After the timing is finished, separate the infused leaf from the tea liquor by removing the infuser or transferring the tea to a second pot through a strainer.
Your tea should have a strong aroma reflecting it’s flavour. Serve optionally with tray and appropriate teaware.
