  • Tea or Tisane (leaf or pyramid tea bag)

Step 2: Temperature

  • Heat the kettle to the desired temperature and pre-heat all the vessels (pot and cup) then discard the water.

If you don't have a temperature-controlled kettle or thermometer, add a little cold water first before pouring over the boiling water. We recommend 10% cold water for 90 degrees and 20% for 80 degrees.

PLEASE NOTE: this is an approximate, and different teaware materials will affect the outcome.

Step 3: Weigh

  • Weigh the appropriate amount of tea as recommended then add to the teapot.

Step 4: Time

  • Pour the desired amount of pre-heated water over the leaves in a circular motion so they unfurl and release.

Steep the leaves for the recommended time.

Note: If the leaves become tightly confined in the pot, give them a little stir to ensure optimal surface area is achieved for extracting all the flavour compounds

Serve

  • Once the desired infusion time has finished, separate the leaves from the tea liquor by removing the infuser basket or by straining into a serving vessel.

Pour into a cup and serve.
