Embarking on this journey as a production recipe developer feels like a dream come true. For my first project, I am delving into the creation of a high-grade matcha powder using premium organic Japanese matcha.

Our company already offers two popular matcha latte options—Hue and Premium Latte—that are well-loved in Australia and the USA. Now, with the opportunity to prioritise flavour and work with top-quality matcha, I am eager to push boundaries and craft something extraordinary that truly showcases the richness of organic Japanese matcha.

For this project, I have been working with organic matcha powders sourced from Japanese tea farms, including one cultivated by the Nishi family on Kyushu Island. These powders are not merely premium but ceremonial-grade matcha. I began by analysing their unique characteristics—colour, texture, aroma, body, and complexity. Rather than relying on a single-origin matcha, I blended three different types to highlight the best attributes of each.

My primary focus for this recipe has been texture, complexity, and longevity. Many matcha lattes on the market boast vibrant colours and flavours, but I noticed room for improvement in texture and the way the flavour develops as you drink. Often, matcha lattes start strong but leave the mouth dry towards the end, turning what should be a comforting experience into something less enjoyable. My goal is to create a silky, smooth matcha latte with flavours that build and linger beautifully until the very last sip.

I have been testing 4–5 recipes daily, assessing each one based on a sensory chart. Even slight adjustments in the recipe have made noticeable differences. If you have two different matcha powders at home, why not experiment with your own blend? Mix them, add sugar or honey to taste, and balance the flavours to suit your preference.

Our new matcha powder is still in development, but it will be launching soon—and I cannot wait to share it with you!
