Long leaves are left to wither and oxidize in the strong sun, then rolled and twisted to shape. Once brewed these leaves release all strong aromas and offset floral & fruity tones.
Oolong tea is a semi-oxidised tea, falling between green (non-oxidised) and black tea (completely oxidised), commonly ranging between 8% to 85%. The leaves are typically kept as whole, that can either be compressed into balls or rolled into whole leaf strips. Due to its nature, most Oolong teas use tea plant cultivars specifically during this procedure.
Oolong tea can be roasted to varying degrees, producing alternate flavours such as floral, aromatic, lightly toasted and dark golden roast. Less oxidised oolongs offer a more fresh green tisane taste, whilst heavily oxidised oolongs present a more malty tea flavour.
How to prepare
Select your brewing vessel and preheat with hot water. Obtain quality water and fill your kettle, setting it to 90°.
Weigh 1.9g of Green Oolong, ensuring you add the leaves first, before following with water.
Upon pouring, set your timer to ensure you steep 3 ⅙ mins. After the timing is finished, separate the infused leaf from the tea liquor by removing the infuser or transferring the tea to a second pot through a strainer.
Your tea should have a strong aroma reflecting it’s flavour. Serve optionally with tray and appropriate teaware.
