How to make tea in a Gaiwan

Step 1: Equipment

  • Tea leaves

    Gaiwan

    Digital Kettle

    Digital Scales

    Timer / Watch

    Serving Jug (optional)

    Spoon

    Cup

Step 2: Weigh & Temperature

  • Heat the kettle to the recommended temperature.

    If you don't have a temperature-controlled kettle or thermometer, add a little cold water first before pouring over the boiling water. We recommend 10% cold water for 90 degrees and 20% for 80 degrees.

    Weigh the appropriate amount of tea and set aside.

Step 3: Pre Heat

  • Heat all the vessels (Gaiwan and cup) then discard the water.

Step 4: Wash

  • Add tea leaves to gaiwan, pour over hot water to wash and awaken leaves. Once leaves are covered immediately pour out and discard water.

    Note: wash leaves for no longer than 5 secs.

Infuse & Serve

  • Steep the leaves for the recommended time.

    Once the recommended infusion time has finished, pour tea immediately or separate the leaves by straining into a serving vessel.

    Pour into a cup and serve.
