Orange Pekoe refers to the classification of the tea, rather than the flavour. To be classified as a Pekoe, a tea must be made up of purely new flush leaves.
Referencing the Flowery Broken Orange Pekoe system, this grade is defined by two principles; the size of individual tea leaves and the part of the leaf, the tea contains.
‘Broken leaf teas’ emphasize the area of which the tea is plucked and how many buds or tips remain. Due to the increased surface area, a broken leaf tea will produce a darker & more intense brew compared to other distinctions among the grading system. These young leaves characteristically full bodied, smokey and rich, creating many of the signature flavours and aromas in our classic teas.
How to prepare
Select your brewing vessel and preheat with hot water. Obtain quality water and fill your kettle, setting it to 90°.
Weigh 1.3g of Orange Pekoe, ensuring you add the leaves first, before following with water.
Upon pouring, set your timer to ensure you steep 4 ½ mins.
After the timing is finished, separate the infused leaf from the tea liquor by removing the infuser or transferring the tea to a second pot through a strainer.
Your tea should have a strong aroma reflecting it’s flavour. Serve optionally with tray and appropriate teaware.
