Why We’re Building a Tea Bar
culture-post-img

Early next year, we’re opening an experimental tea bar/lab downstairs at our Carlton office on Cardigan St.

It's designed to do three things:

Show the whole EBC category

Hospitality education

Drink creation

Collaborations: a past tea and food pairing with Mark Protheroe, the kind of session the bar will host.

Embodiment of a category

The bar will serve no coffee. Instead, it’s tea and botanicals done differently.

We call it Whole Plant Design: understanding and creating with each part of the plant, from leaves and flowers to seeds, bark, roots and fruit. Our beverage design system takes a chef’s approach, using techniques to build depth, giving once-singular drinks the structure, complexity and intensity of other categories. It can mean future-forward non-alc alternatives or signatures, or very inventive versions of iced tea. For pure, one-ingredient drinks, like a single garden tea, nothing changes. We source in peak season and prepare it perfectly. The range is endless, and whatever it is, it all fits into the same whole plant system.

Guests will be immersed in EBC x Food Pairing, one of the most incredible movements we’re seeing. We’ll serve small plates, seasonal and focused on vegetables and fruit, paired with drinks that complement or contrast. We’ll also highlight tea temperature. Poured from 4°C to 90°C, will add another dimension to a dish, bringing out umami, melting richness or cleansing the palate.

We’ve always been a very private company, but the bar will share the work we do in our certified organic factory in Cheltenham with our customers. Upstairs, we’ll have a retail store, more like a mini warehouse, holding everything we make.

Wild Ancient black tea with aged cheddar and pear chutney. Absolutely divine.

Hospitality education

We’ll teach more than just how to make a great beverage. Away from their own cafe, our customers will see how we prep, how the workspace flows and how each drink is made. It’s demonstration-style and all connected to our digital training platform, so cafes can slot the program straight into their business.

Baristas, sommeliers, bar teams and chefs will learn practical skills, food pairing, bar systems and set-up.

Our partners, from coffee roasters and distributors to hospitality groups, can get sales training and product knowledge, plus consulting that starts with understanding where they are at to guide them from product to profit.

We’ll train roasters and baristas to run a full EBC program beside their coffee.

Drink creation

Behind the bar will sit a temperature-controlled glass lab, designed for experiments, tests, fermentation, ageing, cupping and quality control. Our NPD team and tea curator will create components and complete drinks there, and invite our partners in to work alongside them: chefs, sommeliers, baristas and bartenders.

We’ll host events and showcase our clients too. Some ideas will make it onto the bar, and the best will go to our factory to become products for our customers. The heart of this room is creativity.

The lab will be temperature-controlled, for experiments and new components.

The local cafe is no longer a coffee shop. It’s a total beverage house.

The industry is reaching out more than ever for non-alc options that aren’t sugary drinks, juice or soda, and sommeliers want serious tea menus that pair with food, with the depth usually only expected of wine.

The public will be welcome to pop in too. A fold-out, hole-in-the-wall window has been installed, and we’ll have a couple of outdoor tables. But at its heart, it’s a space to showcase the category, share what we know with the hospitality community we love, and keep creating.

We’ll keep you posted, and hope you can come say hello once we open in early 2027.
