There are many legends and mysteries surrounding the origins of Tie Guan Yin. The most accepted tale tells the story of a peasant farmer, who restored a dilapidated temple honouring the Goddess Guan Yin. He was rewarded with the gift of a tea plant, a symbol of her gratitude for his kindness and hard work. And so the tea became known as Tie Guan Yin (Iron Goddess of Mercy). Its well-formed leaves are lightly oxidised, then tightly wound, delivering a pale yellowish green brew when infused. The tea reveals a bright perfumed aroma, with hints of orchid flowers and banana.
